HOT TURKEY LOAF
Serves 25
Recipe from Lula Maude Davis (Mrs. Paul W. Davis Sr.)
2 chickens or 1 turkey
4 cups soft bread crumbs
6 eggs -- well beaten
1 1/2 qt. Sweet Milk
1 teaspoon paprika
2 cups cooked rice
2 tsp. salt
1/2 cup oleo or fat from fowl
2 cups celery
Sauce:
4 cups broth made into cream gravy
2 small cans mushrooms
1 small jar pimentos
Cook turkey or chicken and cut into pieces crosswise. Combine ingredients and pour into baking dish. Bake 1 hour in moderate oven. Let stand 15 min. before serving. Cut in squares and serve with sauce.

MMmm.... sounds very much like what I do with left over christmas turkey...
But I just make a mushrooms sauce and toss all the left over turkey meat in it and add some chopped onions. That tastes better and you can make really good hot sanwiches with it!

1 can Campbells mushroom soup
1 can chopped mushroom
1/2 finely chopped onion.
A little pam or a spoon of butter just to sautĂȘ the onions.
Left over turkey - all that is around (or any other kind of chicken or turkey you have around)
Heat in a deep sauce pan the pam and add the onions, when they turn translucid add the campells soup with just half the needed amount of cream or milk. Move with a wood spoon.
Add the chopped mushrooms (drain them first!)
Let it simmer at medium heat. when it is boiling add the turkey. Let it cook a little more, no more than 10' minutes.
And ready.
Get a good baggette or a chapati and fill them with this. tastes heavenly!
