First time I put too much lemon juice in (it was still tasty, but very tart) and second time I don't know what happened, I think the heat was too low, it foamed. This time, however, it is lovely and pale yellow and good on cookies.
I don't know if I've posted the recipe for this -- it's Alton Brown's, I can't take credit -- so here it is.
